Radiator Fans Runs Constantly

GMC Yukon 2015  175000 miles
If I don't let the engine warm up until the temp gauge reads ~200 degrees, when I reach 200 degrees under normal driving conditions (Highway use) the radiator fan kicks on and the temp gauge drops to 0. I have replaced the temperature control sensor to the radiator with no success. The only way to turn off the fan is to disconnect the battery to reset the sensors.

I changed the thermostat also on mine after temp sensor replacement and fans stay on for like a minute after key off

Engine control unit (ECU) or a wiring issue, rather than just the sensor, as the battery reset temporarily fixes it.

Engine, hot AC, shutting off

Temperature gauge drops to zero AC will not come on. You can pull a fuse to get it to go away, but that does not fix the problem. Also changed maybe a temperature sensor went away for a while and has now returned. Going to try the wiring plug next, but other than that, do not know the reasons recently changed water pump, maybe a vapor locker or something any help would be appreciated
